  • 4 sweet potatoes
  • 3 tablespoons olive oil
  • ¼ teaspoon ground black pepper
  • ½ teaspoon kosher salt
  • ½ teaspoon garlic powder optional
  • 1 teaspoon smoked paprika optional
  • 1 teaspoon dried thyme optional

Instructions

  • Before lighting the grill, apply a thin layer of canola oil to the grill grates(this will prevent the potatoes from sticking to them).
  • Turn your grill up to medium-high, around 180°C.
  • Heat water in a large saucepan over high heat. Add the whole sweet potatoes and bring to a boil, then reduce to a simmer. Heat until potatoes are quickly cooked through, about 5 to 10 minutes. Remove sweet potatoes and let rest until cool enough to handle.
  • After cooling, cut the potatoes into slices. You can peel them if you prefer skinless potatoes, but you don’t have to, and leaving them out saves a lot of time.
  • Place the sweet potato slices in a bowl and drizzle over the olive oil. Mix with salt, black pepper, garlic powder, smoked paprika and dried thyme. Stir until the sweet potatoes are evenly coated.
  • Place the potatoes directly on the grill. Cook about 5 minutes on each side, or until potatoes have charred grill marks.
  • Season with more kosher salt and serve
